This year the school eco team grew a range of fruits on the school grounds. Harvest was taken at late summer, producing a bumper crop of blackberries, apples and pears. The crop was used to make blackberry and apple loaf and blackberry jam. Mrs Wilson made the blackberry and apple bread using her own recipe, and it was enjoyed by staff during their planning days in August. Mr Buick and Mrs Buick made blackberry jam which has been distributed as a tasty treat for September.
The pear tree produced fruit this year for the first time which was enjoyed as a refreshing and delicious break time treat. If you would like to try the blackberry and apple bread at home, the recipe is below.
Blackberry and Apple bread
Ingredients
- 200g Plain flour
- 100g Castor sugar
- 50g Light Muscovado Sugar
- ½ tsp Cinnamon
- ½ tsp Mixed Spice
- ½ tsp Salt
- ½ tsp Bicarbonate of soda
- 135 mls Light olive oil
- 2 eggs, lightly beaten
- ½ tsp Vanilla extract
- 200g Blackberries
- 1 Apple, peeled and chopped (do this at last minute)
Instructions
- Pre-heat oven to 180°C.
- Grease and flour a loaf tin (22 x 11 x 6 cm)
- Sieve the flour and mix all the dry ingredients together.
- Then with a large spoon fold in the eggs, oil, vanilla extract, apples and blackberries until just mixed.
- Place in a loaf tin and sprinkle on the Demerara sugar.
- Bake for 65 – 70 minutes until a skewer comes out clean.
- Serve with butter or on its own. Will last for several days kept in an airtight container.
